戚风蛋糕的英文名为chiffon cake  ,chiffon愿意是指如丝绸般细致,由分开的蛋白加细砂糖打发制作。它的组织膨松,水分含量高,味道清淡不腻,口感滋润,松软有弹性,是东方人最喜爱的蛋糕之一。戚风蛋糕在网络有个别名叫”七疯“蛋糕,只因很多人经过多次的失败,被它气疯至少七次才能成功而得名。包括我自己更是失败了无数次,浪费了上百颗蛋,才会有一些心得体会。以下我为大家写了一个6寸的戚风蛋糕胚的做法.
材料:蛋黄部分:蛋黄:2  低筋粉:40G   玉米淀粉:5G   糖粉:10G   纯牛奶:30G    色拉油:25G
           蛋清部分:蛋清:2    细砂糖:30G(此处的白砂糖能不用糖粉代替哦!) 3-5滴柠檬汁 
 步骤:1、用分蛋器将蛋清与蛋黄分离(注意分离是不要让蛋白沾到一丝蛋黄)。
            2、分别将蛋黄、蛋清盛装入容器(容器事先用纸巾擦干,保证无水无油)。
 

 3、将色拉油及纯牛奶打至油水混合。加入蛋黄、糖粉、继续搅打
4、先筛入三分之2低筋面粉和玉米淀粉。用手动打蛋器充分搅拌均匀,至无颗粒状。
  
5、再筛入剩下的三分之一的低筋面粉,搅拌至无颗粒状。此时蛋黄部分已完成。
6、蛋清倒入容器中,用电动打蛋器以中速打散。
 7、加入3-5滴柠檬汁,以中速打散。加入3/1细砂糖,以中速搅打。
8、打至蛋白体积打一倍,蛋清不再滴落时, 再加入3/1细砂糖。
9、中速打至蛋清起纹路,蛋清尖峰往下垂时,加入剩下的细砂糖。
10 继续搅打,停机从蛋盆底部抽出打蛋器,蛋清尖峰短而直。蛋清的细纹非常明显,搅打是感觉手沉,即已达到十分发的硬性发泡程度.
 11.3/1蛋白霜放入步骤5的蛋黄部分,用橡皮刮刀翻拌均匀。
12.拌好的面糊倒入剩下的3/2蛋白霜内。
 13.使用切拌法及翻拌的方法,搅拌至蛋白与面糊完全融合。
 14、将蛋糕糊倒入模具内,以上往下轻摔数下,以震去气泡。
  15、以上下火160度烤炉进行烘烤(蛋糕进炉前,一定先将烤炉预热到所需的温度)。
 16.蛋糕入炉后,放至最底层。戚风蛋糕会分时间慢慢上涨,涨到一定程度会停止上涨。
 17.到接近成熟时,开始回落至差不多于模具相平。此时再烘烤几分钟就成熟了:会闻到浓香的蛋糕味,表面呈金黄色,用手按压蛋糕表皮有弹性,并不会留下指印,即已成熟。即可出炉。
 18.将烤好的蛋糕取出后马上轻摔两下,扣到在烤网上。烤网底部需有空隙,让水汽散发。 
 19、待蛋糕冷却后,方可脱模。
 20 。用脱模刀将蛋糕脱模(要一次性脱模,中间不能停)
 21,用抹刀,将蛋糕底切除。
 
 此时,一个6寸的戚风蛋糕胚已完成:膨胀度高,表皮薄,内部每个气孔都是张开的,无明显大气孔。
 最后温馨提示:此配方的鸡蛋是大鸡蛋,如用小鸡蛋(土鸡蛋)则需多加半个鸡蛋。
                        夏季鸡蛋容易变质,不新鲜的鸡蛋打不出稳定的气泡。
                        为保证成功率,可加入1G的泡打粉混合在面粉中,过筛后使用。

Ingredients

3 1/2 cups flour
1 cup pumpkin puree
1/2 tsp cinnamon
1/4 tsp nutmeg 
pinch salt
1 tsp bread improver
2  1/2 tbsp milk powder
1/4 cup sugar
2 tbsp instant yeast
1/3 cup warm water
1/4 cup sunflower oil

Fillings:
1 cup fresh milk 
1/4 cup sugar
1/4 cup evaporated milk
2 tbsp.ful cornflour
a drop of yellow colouring
1 tsp vanilla
1 egg yolk
1 tbsp butter

How to make Pumpkin custard buns


1. For the dough , mix the yeast in 1 tbsp sugar with warm water. leave rest until yeast becomes frothy.

2. Mix the rest of the ingredient in a large bowl except oil, add the yeast mixture and knead till combine, then add oil to smoothen the dough. Add a little at a time if the dough is too sticky. Knead well and leave to rise till double.

3. punch down the dough and knead again. divide the dough into few small buns smaller than  a tennis ball. 

4. Roll each dough by folding few times inwards. Place them on a greased tray apart from each other giving room to rise again. 

5. While waiting for the buns to rest , you can make the custard filling by adding the cornflour with evapourated milk and a drop of yellow colour. 

6. In a saucepan bring fresh milk and sugar to boil, then stir in the cornflour mixture slowly by stirring constantly until thicken, Off the heat , add the yolk , stir till mix, then add the butter and stir well. Add vanilla. Place custard in a piping bag with small hole nozzle. 

7. Pipe custard into the center of the bun, press the custard into the bun. 

8. Bake in preheated oven at 250 C for 10 to 15  ins or till golden

Gluten Free Chocolate Birthday Cake

Recipe (adapted from Nigella Lawson’s Chocolate Olive Oil Cake)
Ingredients100 ml olive oil (I used extra virgin as that was what we had in the house)
35 grams cocoa powder
85 ml hot water
1 generous teaspoon vanilla
100 grams ground almonds
Pinch of bicarbonate of soda
170 grams sugar (Nigella uses caster, but I used a light brown for an extra fudgy texture)
2 eggs
Method- Beat together the cocoa powder and hot water to a smooth paste (like melted chocolate)
- In a large bowl (a stand mixer if you have one), whisk the eggs, sugar and olive oil until they are light and aerated – lots of fine bubbles and quite thick. It should take 3-5 minutes if using a stand mixer, a little longer by hand
- Pour in the chocolate mixture, vanilla, and add the almonds and bicarbonate of soda. Mix on a slow speed until all combined
- Spoon or pour the mixture into a lined and well greased tin (I used a 7 inch round sponge tin)
- Bake for around 30 minutes at 180 degrees. Use a skewer / cake tester to check if it’s done, it should come out clean with no batter visible, maybe just a few crumbs
- Leave in the tin for 5 minutes, before turning out and cooling on a wire rack

Whilst the cake is cooling the icing can be made – I started off making a ganache, with milk instead of cream, but quickly decided a thick chocolate fudge icing would be better!
Chocolate fudge icing200g dark chocolate
65g butter
120ml milk
75g light brown sugar
Method
- Put the chocolate, butter and milk into a heavy-bottomed saucepan, and heat on low until everything is melted together and smooth
- Add the sugar, stir well, and turn the heat up so the mixture starts to boil
- Allow it to boil for around a minute, stirring gently, then remove from the heat
- Stir and leave to cool until it reaches your desired consistency
- Spoon, drizzle, and generally adorn all over your cake, allowing to drip down the sides

And to finish, a homemade ‘happy birthday’ bunting banner. There are plenty of templates online which you simply print off, cut out the triangles, and loop over a piece of string – a lovely hand-made touch that takes no time at all (especially if you do it whilst watching the tv…)

Very Moist Chocolate Cake


Very Moist Chocolate Cake

2 cups sifted flour
2 cups sugar
¾ cup unsweeted cocoa
2 teaspoons baking soda
2 eggs
1 teaspoon salt
1 cup buttermilk
1 cup oil (I use corn oil)
2 tablespoons espresso
2 teaspoons vanilla extract
1 cup boiling water

Preheat Oven to 300°degrees. Lightly grease and flour a 9 x 13 in. baking pan. Place all dry ingredients in a large bowl and mix. Then mix in remainding incredients at medium or medium high speed until all ingredients are blended and smooth. Pour into greased and floured baking dish. Bake for about 1 hour. Test by sticking a knife or toothpick, if it comes out clean, it's done. Allow to cool completely and frost with your favorite iwhat cing.

I usually frost the cake with whipped cream and for the filling I make a french custard filling as you can see the picture above. Below is an icing recipe that works well if you crave for something richer.

French Custard Filling
Makes about 2 cups of filling

1/3 cup sugar
1 tablespoon flour
1 tablespoon cornstarch
1/4 teaspoon salt
1 1/2 cups milk
1 beaten egg yolk
1 teaspoon vanilla
1/2 cup heavy cream whipped

Combine sugar, flour, cornstarch, and salt.Gradually stir in milk.
Cook and stir till mixture thickens and boils; cook and stir 2 to 3
minutes longer. Stir a little of hot mixture into egg yolk; return
to hot mixture. Stirring constantly, bring just to boiling, then add
vanilla. Cover entire surface with clear plastic wrap or waxed paper;
cool completely. Beat smooth then fold in whipped cream.

Icing Recipe

2 cups sugar
1⁄4 cup light corn syrup
1⁄2 cup milk
1⁄2 cup sweet butter
2 oz. unsweetened chocolate
1⁄4 teaspoon salt
1 teaspoon vanilla extract

Place sugar, corn syrup, milk, butter, chocolate, and salt in a saucepan and cook over low heat until melted. Over high heat boil until mixture reaches 220° on candy thermometer or for about a minute.

Pour icing into a small mixing bowl. Beat at medium speed until slightly cooled then add vanilla. Increase speed and beat until icing is workable. Working fast before icing sets, spread between layers and on top of cake.
